The Fresh Market is pleased to offer all natural, free range lamb. Our lambs graze in fertile pastures and feed on grasses such as clover and rye. When necessary, they will be fed a supplementary diet of natural feed products to ensure a year-round supply of premium lamb. You can be rest assured that there are no additives and artificial growth hormones used, allowing for a truly natural product.
We offer meatier, leaner lamb cuts that are low in cholesterol so you can feel good about what you are eating. Tender and mildly flavored, we offer a wide selection of cuts of lamb including: leg of lamb, lamb tenderloin, rack of lamb, lamb chops, lamb shanks and ground lamb.
Domestic Milk-Fed Veal
The Fresh Market offers domestic milk-fed veal every day. Our veal comes from American farmers in the heart of Wisconsin dairy country. But what is the history of Veal and why is it produced in areas known for dairy production?
Veal has been a popular dish in Europe, particularly in Italy, for many centuries. However, Veal was not popular in the United States until the middle of the 20th century. At the time, male Holstein cows were not useful since they did nothing to help dairy production. With breakthroughs in veal “formula”, or milk-replacer, the male Holsteins could be used in Veal production. Veal quality improved and the popularity of Veal spread quickly from Europe to the United States.
